Chestnut flour pastry cream

8 tablespoons of chestnut flour, 4 tablespoons of sugar, 4 egg yolks, 4 glasses of whole milk, vanilla sugar to taste or lemon zest to taste..

Take all the ingredients and choose whether to use vanilla sugar or lemon zest. Whip the egg yolks and sugar well, add the flour a little at a time using a sieve and removing any lumps. Add cold milk, vanilla and lemon and put on very low heat; Turn with a wooden spoon until the cream mounts and tightens. Pour into cups and serve cold or use cream to fill the cream puffs.
