Chestnuts tortelli

Ingredients for 4 people:
150 g chestnut flour, 50 g white flour, 3 eggs, salt, 400 g fresh chestnuts, 150 g ricotta cheese, parmesan cheese and pecorino cheese, pepper, herbs (thyme, marjoram, and sage), butter to taste.

It is a recipe that combines a filling of fresh chestnuts with puff pastry of chestnut flour. For the dough take 150 gr. of chestnut flour and 50 gr. of white flour, three eggs and salt. Prepare the pasta and let it rest for half an hour. For the filling, boil 4g of fresh chestnuts with the skin in salted water and a bay leaf; pass the peeled chestnuts to the mill. Mix it with 150 grams of ricotta, parmesan cheese and pecorino cheese (about 6 tablespoons), salt, pepper, herbs. Then prepare the tortelli and season with melted butter flavored with herbs (thyme, marjoram and sage) and Parmesan.
