Capaltaz (Tortelli with chestnuts)

IIngredients for 4 people:
3 eggs, 300 g flour, 100 g dried chestnuts, a pinch of salt, 300 g sugar, 4 tablespoons saba, 2 tablespoons bitter almond, grated lemon zest.

Prepare dough in the traditional way, apart from boiling the dried chestnuts in a little water with a pinch of salt, previously left to soak for 45 minutes and washed. When they are boiled, dissolve them, pass them to the vegetable mill, add sugar, bitter almond and saba.
Make a dough not very hard but homogeneous.
Cut 10x10cm squares of puff pastry, place in the center of each square a spoon of stuffing, join the tips and make the edges of the dough adhere giving the shape of the traditional tortellino. Boil in plenty of salted water and season with saba sauce or olive oil and pepper.
