Ingredients for 4 people:
300 g of fresh chestnuts boiled with a bay leaf, 4 slices of fillet a couple of centimeters thick, 100 g of bacon in a single slice, 1 glass of brandy, 1 deciliter of broth or boiling milk, 1 small onion, 1 clove of garlic, oil, salt to taste, pepper p.p.
Peel the boiled chestnuts without breaking them.
Cut the bacon into small cubes, brown them with the onion cut into veils and the clove of garlic that will then be removed, and a little oil. Once it becomes transparent and crunchy, do not dry, add brandy, broth, salt and pepper, chestnuts and let simmer slowly for about ten minutes, stirring gently.
Cook the fillet according to the desired taste, more or less cooked, put it in the chestnut pan, cook it for another couple of minutes, serve boiling.
