Castagne arrostite alla fiamma “bruciate”

Ingredients for 6 people:
600 g fresh chestnuts, 250 g sugar, 2 glasses of rum.

 
Make a cross incision with a knife on the rounded part of the chestnuts, wet them slightly with water, and put them in the roaster.  Cover the fresh chestnuts with a damp cloth and cover with a lid. Roast them, making sure that they cook perfectly without getting singed, and peel them afterwards.
Put the sugar and a glass of water in a small saucepan.
Let it boil, and immediately pass the peeled chestnuts in this syrup, keeping them on the fire until the syrup is almost completely absorbed. Then pour the chestnuts in a very hot oven dish, water them with a couple of glasses of rum and set the rum on fire, stirring the chestnuts with a spoon until the flame goes out.  Send them to the table hot on the same plate.
