Croquettes with chestnuts

Ingredients for 4 people:
600 grams of chestnuts, a bay leaf, two egg yolks and a whole egg, 100 grams of Gruyère, grated grana, breadcrumbs, milk, oil, salt.

Cut the chestnuts and boil them for about an hour with a bay leaf and a pinch of salt, then peel them and pass them in the vegetable mill.  Add to the mixture 2 yolks, 2-3 tablespoons of grain, a pinch of salt and add the milk, just enough to get a homogeneous but consistent enough dough to form croquettes.  
Take a spoonful, put a Gruyère stick in the center and close the croquette giving it an oval shape. Continue until all the ingredients are used up.
Pass the croquettes in the remaining egg, beaten with salt and a tablespoon of milk, then in breadcrumbs and fry in hot oil.
